I love unwinding at happy hour with a cocktail just as much as the next person, but a lot of drinks you order while out on the town are loaded with sugar and empty calories. Switch things up: invite your friends over and break out the fruit basket and the juicer for happy hour at home. Not only will you know exactly what is going into your cocktail (all natural ingredients), but you will definitely be saving money. All of these drink recipes contain a combination of cold-pressed juices, real fruits, fresh herbs, and natural sweeteners to create deliciously fragrant and visually inviting beverages. If you want to get super fancy, I have also included some infused ice cube recipes to dress up any cocktail.

Pomelo Cucumber Basil Cocktail

INGREDIENTS

• 2 oz vodka
• 4 oz cold pressed pomelo juice (can sub grapefruit juice if pomelo is not available)
• 2 oz lemon juice
• 4 slices of cucumber
• few leaves of fresh basil
• splash of agave nectar (or liquid sweetener of your choosing)

DIRECTIONS

First off, muddle the basil and cucumber in the bottom of a cocktail shaker. Next, pour vodka, pomelo juice, lemon juice, and agave, and fill the rest of the shaker with ice cubes. Shake vigorously and pour into a martini glass. Garnish with lemon peel, fresh basil, and a slice of cucumber.

Blood Orange & Rosemary Cocktail

INGREDIENTS

• 2 oz. vodka
• 4 oz. cold pressed blood orange juice
• splash of currant juice (optional)
• 2 sprigs fresh rosemary
• 1 oz lemon juice
• splash of agave nectar (or liquid sweetener of your choosing)

DIRECTIONS

First off, muddle the fresh rosemary a bit in the bottom of a cocktail shaker. Next, pour vodka, blood orange juice, lemon juice, currant juice and agave, and fill the rest of the shaker with ice cubes. Shake vigorously and pour into a martini glass. Garnish with a blood orange slice, fresh rosemary sprig, and currants.

Roasted Fruit Fizzes: 4 ways

INGREDIENTS

• Vodka
• Summer fruits: peaches, plums, figs, and grapefruit
• Herbs: fresh rosemary, mint, thyme, and dried culinary lavender
• Honey
• Lemon
• Club soda
• Elderflower kombucha (or the flavor of your choice)
• Agave nectar

DIRECTIONS

Makes four drinks, one of each flavor: grapefruit, peach, plum, and fig

Preheat oven to 400° F. Slice two figs, one peach, and one plum. Cut off all skin and pith of the grapefruit and slice. Spread sliced fruit on a parchment lined baking sheet.

• Grapefruit: drizzle honey and fresh thyme
• Peach: drizzle honey and lavender
• Plum: squeeze a bit of lemon juice and rosemary on the plum
• Figs: leave the sliced figs as is

Bake for about 20-25 minutes or until the fruit is roasted and caramelized.

For a pulpy cocktail, muddle each of the roasted fruit + herb combos in a separate cocktail glass (you may want to add some more herbs during this step, depending on how strong you want the herb flavor to be).

For a pulp-free cocktail, combine the roasted fruit + herbs with the remaining ingredients in a cocktail shaker and strain. Add 1 oz chilled vodka, 2 tsp agave nectar, and 4 oz club soda to each drink, except for the fig drink in which you will add 4 oz kombucha. Additionally, for the plum drink you will add the juice of half a lemon and fresh mint leaves.

Garnish with additional herbs and fruit. Enjoy!

Blackberry Basil Bourbon Lemonade

INGREDIENTS

• 2 oz bourbon
• juice of 1 large lemon (or 2 small lemons)
• 1/2 oz honey simple syrup (boil equal parts honey and water until combined)
• 1/4 cup roasted blackberries
• a handful of fresh basil

DIRECTIONS

Roast blackberries at 400 degrees F for about 15 minutes. This isn’t mandatory, but I have found that roasting not only brings out a more fragrant flavor, but it also makes for easier muddling. Once your blackberries are roasted and set aside to cool, begin muddling basil at the bottom of a cocktail shaker. Next, add your blackberries and muddle until they appear to be the consistency of a jam. Finally, add bourbon, honey syrup, lemon juice and ice and shake. Pour into a glass of your choosing and garnish with a blackberry, basil leaf, and lemon peel.

Passionfruit Gimlet with Honey Lavender Syrup

INGREDIENTS

• 2 oz. vodka
• juice of 1 lime
• 1 oz. honey lavender simple syrup • 1 passionfruit

DIRECTIONS

First off, you’ll need to prepare the honey lavender simple syrup. In a small pot, heat 4 parts honey to 1 part water with 1 teaspoon of culinary lavender over medium heat. Let the mixture heat until it reaches a simmer. Next, remove from heat and pour through a strainer into a jar. Set the simple syrup aside and it let it cool. When you’re ready to make your drink, scoop out your ripe passionfruit and add it to a cocktail shaker; fill the rest of the shaker with 2 oz. vodka, the juice of one lime, 1 oz. of honey lavender simple syrup, and ice cubes. Shake vigorously and pour into a glass. Garnish with passionfruit and lavender (optional). Enjoy!

Roasted Strawberry Gimlet

INGREDIENTS

• 2 oz vodka
• 1 oz fresh squeezed lime juice
• 1/2 cup strawberries
• 1 tbsp honey simple syrup ( boil equal parts honey and water )

DIRECTIONS

Preheat oven to 400 degrees F. Clean strawberries and cut off the greens. Place in a parchment lined pan and roast in the oven for about 20 minutes; set aside and let cool. Muddle strawberries in the bottom of a cocktail shaker. Next, add honey syrup, lime juice, vodka and fill the remainder of the shaker with ice. Shake and pour over beet and thyme infused ice cube.

Optional:

• add club soda if you want to thin the drink out a bit
• muddle basil leaves along with the strawberries for a delicious strawberry basil gimlet

Cucumber Basil Gin Martini with Honey Rosewater Infused Ice Cube

INGREDIENTS

• 2 oz gin
• a few slices of cucumber
• 1 tbsp fresh lime juice
• 1 tsp honey simple syrup

DIRECTIONS

For the ice cube: freeze water with 1/4 tsp rosewater and 1 tsp honey simple syrup (boil together equal parts water and honey and let cool), and rose petals (not necessary, just for decoration!)

In the bottom of a cocktail shaker, muddle together cucumber and basil. Next, add gin, honey syrup and lime juice. Fill the rest of the cocktail shaker with ice and shake vigorously. Pour over honey rosewater ice cube and enjoy!

Beet & Thyme Ice Cube

Using the ice tray of your choice ( I used a large square tray) pour water, 1 tsp beet juice, pomegranate seeds (optional) and some fresh thyme sprigs. Freeze and serve.
