Strong + Radiant | A Day in the Life of Local Juicery Founder Summer Sanders

Summer Sanders is the founder of Local Juicery in Sedona, AZ. She is a Certified Raw Food Chef, Holistic Health Coach, Sports Nutrition Specialist and is Certified by The National Academy of Sports Medicine as a personal trainer. After working as a raw food instructor at the Matthew Kenney Culinary Institute in Santa Monica, California, Summer decided she was ready to venture out and start her own business, an endeavor that would help educate others on the benefits of cleansing and a plant-strong diet. Summer shares her love of healthy living on her blog Strong + Radiant, you’ll find amazing plant based recipes, inspiring guest posts and plenty of health and fitness support.

As a restaurant owner, health coach and mama my days are incredibly packed. I have to be very mindful about setting times for myself to eat, otherwise I just get swept by the day from one meeting to another. Running an organic superfood kitchen and juicery does help when I’m on location, but often I’m running around averting disasters, picking up my little boy and taking him where he needs to go and tending to client’s needs. I love what I do and being amama, I  wouldn’t change it for the world, I just had to set healthy boundaries for self-care. I think this is something most women can relate to! We tend to nurture and attend to everyone else before we get to ourselves. I’m supporting you to change that. Fill your cup so you can fill others.

MY NUTRITION

I eat predominately vegan, but I’m not strict on this. I don’t associate with any kind of “diet,” I love food, I love options! It’s mostly about really well sourced items for me. My eat plant-rich foods, which change every day based on what I feel my body needs. My hope is that this overview of my day can inspire you to add nutrient dense superfood into your life that will help fuel you and give you energy through your day without taking too long to prepare.

MY MORNING

I start each day with at least 32 ounce of reverse osmosis water. I used to add lemon and I sometimes still do, but with so much going on I usually just stick to the water. Lately I’ve been adding about a half teaspoon of Himalayan crystal salt to support my adrenals.

SHOTS

I’m incredibly blessed with a godfather that grows the most amazing wheat and barley grass, so I try to get a 2oz shot of either one of these each day. This is usually followed by a zero sweet cold-pressed green juice from my juice bar.

TONIC TIME

After this, I enjoy a tonic or coffee. I also make a killer Matcha latte that I could drink every day. My favorite tonic right now is based in almond milk with a ton of superfoods, apoptogenic herbs and healthy fats. I’ll share my favorite breakfast tonic recipe below. This is usually what gets me though until around noon on my super busy days.

LUNCH

Around lunch, I opt for vegetable soup that I make ahead of time, or I’ll make a quick kitchen sink salad (everything I can find in the refrigerator!) with a tahini dressing. Sometimes I just have leftovers, or if I’m not feeling solid food I’ll make a quick superfood smoothie with almond milk, avocado, spinach, frozen berries and whatever superfoods I’m feeling that day. I try to keep lunch simple and really easy.

SNACK TIME

For a snack I’ll usually have a handful of macadamia nuts or 1-2 apples with cinnamon. This get me to dinner.

DINNER

For the family and myself I always make sure to have some kind of green, we’ve really been into sautéed dandelion lately with olive oil and a touch of garlic. So good and incredibly beneficial to your liver. I always have a healthy carb: either squash, yams or organic rice, I like these all with either grass fed butter or ghee. For a protein, I like wild caught salmon or organic pasture raised eggs. I usually only have animal protein 1-3 times a week just based on my needs. We make lots stews and Ayurvedic inspired meals.

TREATS

Dessert sometimes happens, usually a piece of raw chocolate or some vegan coconut ice-cream.

BODY LOVE

Before bed I always make an adrenal supporting tea tonic. I use a blend called adrenals essence from Essential Medicina. Amazing mixture that I truly find works.

MORNING TONIC ELIXIR

INGREDIENTS

1 cup warm gyostemma tea (I love Spring Dragon)
1 tablespoon raw heirloom cacao powder (get it single origin from South America to get less molds)
1 tablespoon tocotrienals
1 tablespoon collagen
1 teaspoon mesquite
1 teaspoon maca
1 tablespoon of ghee or coconut oil
1 teaspoon colostrum
1/8 teaspoon powdered vanilla
5 drops vanilla stevia
1/4 teaspoon pink crystal salt
pinch of cinnamon for topping

DIRECTIONS

Blend it all together until frothy and wonderful. Pour into your favorite cup and savor each drop.
