Rosemary & Beet Gin Fizz: Your New Favorite Holiday Cocktail


With plenty of impending holiday parties upon us, having a go to cocktail choice is a must (whether you’re hosting or attending). Every year, it seems I gravitate towards something a little bit different. This year, I’m a big fan of gin combined with the earthy flavors or beet, a vibrant kick of lemon zest and the subtle balance of sweetness and distinct aroma of rosemary. Perhaps most importantly, this cocktail uses beet juice, which is my favorite ingredient for creating the most beautiful shade of hot pink or red (depending how much you use). Recipe below!


Rosemary & Beet Gin Fizz


• 4 red beets
• 2 small lemons or 1 large lemon
• 3 sprigs of rosemary
• 1/2 cup organic cane sugar
• 1/2 cup water
• ginger beer or club soda (use club soda for less sugar)
• 6 oz gin
• sliced chioggia beets and extra rosemary sprigs for garnish (optional)


In your juicer, add 4 peeled red beets and 1 lemon. Set aside the juice, this should equal about a cup of liquid.

Next, you will create the rosemary syrup. Boil together 1/2 cup organic cane sugar with 1/2 cup water and 3 sprigs of rosemary. Bring to a boil and stir occasionally until the sugar is dissolved. Set aside for at least 30 minutes and let cool.

Next, in a large drink shaker, mix together the beet/lemon juice concoction (you can use the whole amount or less, using a lot of beet juice will yield a deep red color, using less will yield a hot pink color, simply adjust the rest of the components accordingly), 6 tbsp rosemary syrup (you can use more or less depending on sweetness desired), 6 oz of gin, and ice cubes.

Shake it up and pour into glasses over ice. Add a splash of club soda or ginger beer and garnish with a rosemary sprig and a candy striped (chioggia) beet slice.
