Vegan Ceviche

Vegetable Ceviche

Serve as a side dish, in a lettuce wrap or taco, this ceviche is sure to be a crowd-pleaser for vegans and carnivores alike.

Ingredients:

  • 1 yellow bell pepper seeded and diced
  • 1 red bell pepper seeded and diced
  • 1 jalapeño pepper seeded and minced
  • 1/2 of a red onion diced
  • 1 garlic clove minced
  • 1 cup of pitted green olives halved (the olives give it so much flavor)
  • 1 cup small cherry tomatoes halved
  • 1 to 2 hot house cucumbers diced
  • 1/4 cup chopped cilantro
  • 1/2 cup lime juice
  • 1 tablespoon olive oil
  • 1/8 teaspoon of cumin, I like cumin and usually add more
  • Pinch of sea salt

Directions:

Toss all ingredients in a bowl. Tasting your dish as you go is key when cooking. Serves 4
