While Cameron put on a solid gold dance performance, it was her mention of shallot gold, a flavor enhancer she swears by, that got us thinking (and our stomachs rumbling). You see, shallots are not only tasty, but they’re good for you too.
One cup of shallots can provide 5.1 grams of dietary fiber, which is 20% of the daily required fiber for women and 13% for men. Shallots are rich in vitamins A, B, C and E. They also contain flavonoid antioxidants, which travel through the body removing harmful free radicals. AND… they caramelize oh so well!
Here’s what you’ll need to make Cameron’s ‘Shallot Gold’:
- Olive Oil
- Sea Salt
Mince a bunch of shallots – whatever you have on hand. Cook them in olive oil on low heat until they start to color.
Let them simmer for another 30 minutes or so until they’re nice and caramelized. Season with sea salt.
Store in the fridge and add to any dish you think could benefit from enhanced flavor. It has a bacon-type flavor, so add to any dish you would normally add bacon or bacon bits to. Cameron loves to add them to omelets.
