Springtime means that asparagus is right at its seasonal prime. Speaking from experience, asparagus and eggs are a match made in heaven. This recipe makes for a great breakfast, brunch, or lunch option. It’s perfectly satisfying without leaving us feeling hungry or heavy afterwards. Bonus: it’s full of delicious protein!
I love picking up some freshly made bread from a local bakery to use for simplified luxury-vibe meals
just like this. Bread can be a wonderful and nutritious foundation for any dish so I have grown to
appreciate the in-house, homemade loaves made with love. I have also discovered the easiest
way to make fluffy and perfect scrambled eggs… in a blender! It really is as simple as putting the egg
scramble ingredients in your machine and giving it all a quick whiz. And while the asparagus goes in for a little roast, the rest of the toast toppings are prepared stove top and all within a few quick minutes.
Fluffy Scrambled Egg and Asparagus Toast
16 asparagus spears
1 Tbsp. milk of choice
½ Tsp. ground turmeric
¼ Tsp. ground pepper
¼ Tsp. sea salt
½ cup mushrooms, sliced
Bread of choice
1. Preheat the oven to 350 degrees Fahrenheit. Place the asparagus spears on a baking sheet
covered in parchment paper. Drizzle on a little bit of cooking oil and sprinkle on some salt and
pepper. Roast the asparagus until it is tender and turning the perfect amount of golden. The
cook time will vary depending on the thickness of the spears. Mine were on the thin side and
only took 10 minutes.
2. Meanwhile, blend the eggs, milk, turmeric, and salt and pepper in the blender for a few seconds
until it’s frothy. Proceed to cooking the scrambled eggs in a skillet over low-medium heat and
set aside to quickly sauté the mushrooms.
3. Sauté the mushrooms with a few drops of water over low-medium heat. Alternatively, fold the
mushrooms into the eggs and cook them together at the same time.
4. Layer the eggs on the toast followed by the asparagus, mushrooms, and fresh parmesan cheese.
