Beet & Broccoli Salad with Lime Tahini Dressing

There are many reasons I love eating a plant-based diet, and aside from the obvious health and ethical ones, I love how beautiful my food can be! While preparing this salad, the sun was setting through my kitchen window and the golden beams were illuminating the raw vegetables making them look magically sun-kissed by summer. Then, after I took the first bite my theory was affirmed. This salad is so flavourful that if the season ‘summer’ could have a taste, this would be it.

Beet + Broccoli Salad With Lime Tahini Dressing

INGREDIENTS

* makes two servings

2 Tbsp sesame oil
5 cups broccoli crowns
1 cup corn kernels
1 medium beet, peeled & spiralized
2 cups kale, washed, chopped & massaged (please link to my ‘how to massage kale’ post)
2 Tbsp fresh dill – aka one small handful

Lime Tahini Dressing

1⁄4 cup tahini
juice from 2 limes
1 tsp grade A olive oil 1/3 cup water

DIRECTIONS

1. In a skillet, add sesame oil and sauté broccoli crowns for five minutes on high, until they’re soft.

2. In a small food processor or blender, combine dressing ingredients and blend.

3. Add kale and broccoli to a large bowl.

4. Add the remaining ingredients and pour dressing over top. Enjoy immediately
