5 Pumpkin Recipes from Our Instagram Followers {#BragYourPlate}

Pumpkin flavored, pumpkin spice, pumpkin smell, pumpkin themed… this October, more than ever, seems to be in pumpkin overdrive. And we’re LOVING it! However, so much of what is pre-made is sweetened with massive amounts of sugar, additives, chemicals – you name it. So, if you’re tackling a pumpkin recipe this season, please make your own puree. It is SO simple!

Baked Pumpkin Recipe


Purchase a sweet pumpkin (sometimes called a “pie” pumpkin). Preheat the oven to 350 F. Cut the top of your pumpkin and scrape out the stringy membranes and seeds. (Reserve seeds to make toasted pumpkin seeds.) Cut into large pieces and place into a pan with 1/2 cup of water and cover. Bake for 45-60 minutes (until pumpkin is soft).

After pumpkin has cooled, scrape the pulp off of the skin and place into a food processor. Pulse until the pumpkin is pureed. Refrigerate and use within 3 days.

Pumpkin Protein Bars

Perfect Fit Protein Pumpkin Cookie Bars (@leah_go_lightly)

  • 1 can drained/rinsed chickpeas
  • 1/4 c ground oats
  • 1 scoop PF (or no oats and 2 scoops protein)
  • 1/2 pumpkin purée
  • 2 large egg whites
  • 1 T maple
  • 2 T brown sugar
  • 1 T cinnamon
  • 1 t nutmeg
  • 1/2 t baking powder
  • 1/4 t salt


Blend in processor and pour into an 8×8 pan, top with chocolate chips (optional). Bake at 350 for 25 minutes.
