10 Minute Lunch | Simple Tahini Sauce

Come lunchtime, creating a nourishing and quick meal is a top priority of adults across the world. With the help of some meal planning and an easy sauce, you can whip something up in no time. Here is Ashley Wood’s go-to healthy and tasty tahini sauce.

Bowls have been a staple in our house over the past few years. They’re simple, easy and quick to prepare and I love how nutrient dense they can be! A few weeks after becoming a mother, I realized that if I want to have time to exercise, work, relax, be present with my daughter and spend time with my family all while prioritizing my health at mealtime, I needed to stay organized. Although I do enjoy batch cooking on the weekends, I also like having simple and healthy options in the fridge to keep my lunch bowl interesting.

At the beginning of the week, I like to prepare a few sauces to store in the fridge so I can add quick flavor to grains and vegetables. One of my favorite sauces to make is a Simple Tahini Sauce. Tahini contains B vitamins, iron, phosphorus and magnesium and helps with detoxification. It contains alkalizing minerals that ease digestion, aids in weight-loss and tones muscle. The added lemon juice also helps cleanse the liver. By having this sauce on hand, I can prepare a delicious lunch that keeps my body healthy and energized for my family and myself in approximately ten minutes.

Simple Tahini Sauce

INGREDIENTS

¾ cup tahini paste
¾ cup water
juice from 1 lemon

DIRECTIONS

Combine in a small food processor or blender and blend until smooth.

Drizzle on top of your choice of whole grains (brown rice, barley, millet, quinoa) and vegetables (broccoli, spinach, carrots, yam, green peas, avocado, etc.) You can also add more water and lemon juice to this sauce to thin it out and use it as a salad dressing.
