Quick Kimchi Salad

Kimchi, a fermented combo of veggies (oftentimes cabbage), spices, and seasonings, can certainly take a minute to get accustomed to flavor-wise, but it isn’t the national dish of Korea for nothing. As a fermented food (like sauerkraut or kombucha), it packs in high levels of antioxidants and has been shown to help aid your body in metabolizing carbs and cholesterol.

When tossed up with kale, cucumber, avocados, green onions, hemp seeds, and a detoxifying Green Dream marinade, kimchi makes a powerhouse lunch or dinner that’s bound to make your gut and taste buds happy.


 Quick Kimchi Salad

INGREDIENTS

Kimchi Base //
1/2 napa cabbage, shredded or finely chopped
4 cloves of garlic, chopped
1 teaspoon of fresh ginger, finely chopped

Marinade //
1 tablespoon Korean Chili seasoning (crushed/ground red pepper spice will also work)
1 1/2 teaspoon low-sodium, gluten-free tamari
1 tablespoon sesame oil
2 tablespoons rice wine vinegar
1/3 cup water
2 teaspoons liquid aminos
½ teaspoon Philosophie Green Dream Superfood + Protein Blend
1 tablespoon Philosophie Green Bee Honey

For the Salad //
Kimchi Base
2-3 cups of kale
1 large Persian cucumber, sliced
2 green onions, roughly chopped
½ avocado
1-2 teaspoons hemp or sesame seeds

INSTRUCTIONS

1. Combine the marinade ingredients in a medium-sized bowl, then add the kimchi base, and mix thoroughly. Cover with plastic wrap, and refrigerate for 4-5 hours before serving.

2. Add the kale and cucumbers to a bowl, and spoon on the kimchi mixture. Top with sliced avocado, green onions, and hemp/sesame seeds. Add a quick squeeze of lemon and perhaps a pinch of salt to taste. Begin devouring!
