Power-Up Green Smoothie

Power-Up+Green+Smoothie (1)

Green smoothies are kind of an incredible invention. All these wildly healthy ingredients (that you would likely never put together in any other dish), blended into one nourishing and conveniently travel friendly breakfast. I’m not quite sure who the genius was that first put fruits and veggies into a blender and hit the “puree” button, but hats off to him or her. I am happily a smoothie junkie and hooked on starting each and every morning with a beautiful green blend.

Over my many years (many) of smoothie making, I have created countless wonderfully tasty and healthy smoothies. However, one recipe has been repeated many more times than all the others. Whenever someone tells me that they wish they could love green smoothies the way I do, I hand over this magical recipe. Why? Because this smoothie will make you fall head over heels in love with your blender and kale. It is just THAT good. I’d like to introduce you guys to the Power-Up Green Smoothie.

I call it “power-up” because it has so many great-for-your-gut ingredients in it that it really will power you up for the morning, afternoon, evening, or whenever you need to channel Super Mario stumbling upon a fire flower. This green smoothie will seriously stick to your bones and see you through until next meal without blinking an eye.

Not only will it be powering and nourishing your body with all of the amazing fruits and veggies it jams into a glass, but The Power-Up Green Smoothie does a happy dance on your taste buds. My preschool students and 4-year-old daughter love them and it is a great recipe to introduce even the pickiest of eaters to the beautiful world of green smoothies.

*Makes 2 servings

2 cup unsweetened almond milk (I used homemade)
2 frozen bananas, peeled
1/4 cup uncooked rolled oats
1 cup kale, washed and chopped
1 medium apple, washed and chopped
1 tablespoon chia seeds
1 teaspoon vanilla extract
2 heaping tablespoons nut butter of choice (optional)
1 teaspoon ground cinnamon
1/2 cup ice cubes (optional)
1 tablespoon maple syrup (optional)

In a blender, combine almond milk, banana, kale, and rolled oats. Run until all the kale bits are liquefied. Add apple. Puree until smooth again. Add remaining ingredients and run until everything is well incorporated. Serve and enjoy
