Made with whole food, waistline friendly ingredients, this spinach dip is a healthier take on the traditional festive treat. Enjoyed best with sour dough bread, it also pairs well with pita chips, gluten- free crackers and raw veggies. Enjoy!
Hold the Dairy Spinach Dip
1 cup organic soft tofu
3⁄4 cup cashews, pre-soaked for at least two hours
1 onion, chopped
1 garlic clove, minced
1 tsp nutritional yeast
1 Tbsp lemon juice
1 tsp apple cider vinegar
4 cups spinach, shredded
Combine the tofu, cashews, onion, garlic, nutritional yeast, lemon juice and apple cider vinegar in a high-speed blender or food processor and blend until smooth. Scoop it out in a bowl with a spatula and set aside. Next, shred the spinach and steam it until soft. Stir the spinach into the dip.
