It’s no secret that toast is quite possibly the trendiest thing in the food world right now, and I am certainly all for it. Lately, I have been seeing such creative twists on toast that involve replacing bread with less carb heavy options. I’ve been seeing sweet potato toast popping up everywhere- aka using sweet potato slices as the vehicle for endless toppings instead of using actual bread (whoever thought of this is a genius!) After being so inspired by sweet potato toast, I noticed an eggplant sitting around my kitchen and the rest is history. If we’re being totally honest, this is really just roasted eggplant with toppings- but I think it’s more fun to call it toast! So whatever you choose to call it, you’ve got to make it as soon as humanly possible, because it does not disappoint. Below you will find 6 different ways to top an eggplant toast.



• 1 medium sized eggplant
• 1 tsp za’atar
• 1 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp sumac
• pinch of dried or fresh mint (optional)
• salt and pepper to taste


Preheat your oven to 400 degrees F. Wash and slice your eggplant into round 1 inch thick disks. Toss the slices in olive oil and the spices listed above and place them on a parchment lined pan. Roast for around 20-25 minutes or until the eggplant appears soft and slightly browned.
